Kimchi Fried Rice with Diri Kole


I accidentally stumbled across my fave rice dish…

I had leftover diri kole (Haitian rice and beans) and wondered if I could make kimchi fried rice with it, and I was pleasantly surprised. This works great with any leftover rice, or if you’re in a pinch, grab a microwaveable bag of brown rice.

What’s Diri Kole?

Haitian rice and beans made with kidney beans and jasmine rice.

The ingredients -

Leftover diri kole

Avocado oil

Onion

Garlic

Kimchi

Sesame oil

Soy sauce

Coconut aminos

Furikake (optional)

The steps -

Mix onion, garlic, and grated ginger (grates best when frozen) in avocado oil until fragrant.

Add roughly 1/4 cup kimchi to the pan. Heated until fragrant.

Then add leftover diri kole. Mix well.

Next, add sesame oil, soy sauce, liquid from the kimchi, and coconut aminos. Mix well.

Let the rice cook and flavors come together for roughly 8 minutes.

Top with furikake.

Notes -

I used equal parts 1 tbsp of soy sauce, kimchi liquid, and coconut aminos.

Roughly 1 tbsp of sesame oil.
