"Beef" and Broccoli - Shiitake Mushroom Recipe

When I first stopped eating beef in 2011 I vividly remember how difficult it was for me to let go of my favorite Chinese food takeout. Fast forward 8 years and I created the best plant-based take on beef and broccoli using shiitake mushrooms.

A few years ago I shared a tutorial on my IGTV creating this dish and as it’s grown in popularity I've decided to share the written recipe here. It is no surprise to me that this dish was easy to conceptualize because so many Asian cuisines lend themselves well to plant-based alternatives. Additionally, mushrooms are one of my favorite meat alternatives because of their texture and ability to hold flavors.

If you have your pantry stocked with all the sauces needed to make my ramen recipe then you won’t need to go to the grocery store or your local Asian market for the main sauce ingredients: Liquid Smoke,  Soy Sauce, and Coconut Aminos.

I also suggest that you take the time to watch the IGTV video because pressing the mushrooms is an important step to achieve the desired texture - for meat alternatives the texture is important.

This dish pairs well with pretty much any grain. My personal pairing favorites are udon noodles, white rice, or soba noodles.

"Beef" and Broccoli Recipe - Shiitake Mushrooms

Ingredients

  • 1 C Shiitake Mushrooms
  • 1 1/2 C Broccoli, chopped
  • 1 Small White Onion, chopped
  • 3 Garlic Cloves, chopped
  • 1 TSP Cayenne Pepper
  • 3 TSP No Salt Seasoning Blend
  • 1 TBSP Extra Virgin Olive Oil (EVOO)
  • 2 TBSP Liquid Smoke
  • 3 TBSP Soy Sauce
  • 2 TBSP Coconut Aminos
  • Furikake (optional)

Instructions

  1. Dice onion and garlic. Chop broccoli. 
  2. In a saucepan on medium heat, add EVOO. When the pan is hot, add onions and garlic and sauté for 3 minutes.
  3. Add mushrooms and seasonings, both wet and dry. Stir mushrooms well.
  4. Press access water in the mushrooms with a heavy bottom pan or heavy spatula. This step is important because it gives the mushroom the best texture.
  5. Once mushrooms are pressed, increase heat to high heat. Add chopped broccoli and roughly 1/4 cup of water. Mix well. Cook for 3-5 minutes. Broccoli should have a crunch to it. The texture is super important for this dish.
  6. Top with Furikake. Serve warm with rice or your favorite noodle (udon, ramen, soba, etc.).
